Idiot Proof Recipes : Mushroom and Ham Aglio Olio

Ingredients :

4 cloves chopped Garlic
3 cloves chopped Onion
2 tblsp Olive Oil (Refer to photo below)
2 ham (cubed)
3 white button mushrooms (sliced)
A handful of spaghetti
3 mini chilli padi (sliced) – Depending on preference
3 tsp salt
1 tbsp Masterfood parsley leaves (Refer to photo below)

Note :

The brand for the parsley leaves is optional, though i personally favour Masterfood brand. Spiciness is optional. I personally like my aglio olio to be very spicy, thus, added 3 mini chilli padi. For normal spiciness, 2 mini chilli padi will be more than sufficient. Aglio Olio is slightly different from other pastas as its flavouring comes generally from the garlic and parsley leaves. Thus, you need to add more salt. However, it wise to taste while cooking. Mushroom and ham is optional, you can innovate you aglio olio by adding different ingredients like prawns (remember to soak prawns in salt water for 10 mins before cooking), bacon, squid, etc.

Procedures :

  1. Add few drops of olive oil and salt to boiling water. Add spaghetti and boil for approximately 15 mins.
  2. Meanwhile, you may make use of this 15 mins to prepare your ingredients (chop garlic and onion, slice mushrooms, cube ham, slice chilli padi, etc.)
  3. Add olive oil into heated frying pan. Fry garlic and onion till fragrant. Add mushroom, ham, and chilli padi. Stir fry till mushroom soften. Transfer spaghetti into frying pan. Stir fry till spaghetti is coated with the olive oil. Include salt and parsley leaves. Add more olive oil if necessary. Stir fry for approximately 30 seconds.
  4. Serve. You may serve pasta with white wine.
